A white truffle, a select wild gem

Considered the most select truffle in the world, the white truffle owes its prestige to its low and limited availability, since it is grows wild in the fields from the end of September to the end of December.
This variety of truffle mostly grows in Italy where festivals, such as the one that takes place every year in the castle of Grizane Cavour, near the Piedmontese city of Alba, are held to celebrate its delicacy. This is the international charity auction for white truffles, where the most famous restaurateurs and foodies bid against each other to obtain precious gastronomic diamonds.
The white truffle can be enjoyed when cut into waver-thin shavings, as a finish to simple dishes with few spices, such as salads, pasta and risottos.
